Got munchies? This should do the trick. Just make sure you have some milk handy in case jalapeno burn gets you.
All you need is:
1 serving of baked tortilla chips (I use Tostito baked scoops)
1 oz. 50 % reduced fat cheese (I use Cabot cheddar or pepper jack)
1 fresh jalapeno pepper, sliced into the same number of rings as you have chips.
Everyone should have a toaster oven, I’m finding, because it’s perfect for these single-serve meals–and this can be a meal or a snack, with just 4 points if you follow the above guidelines. Place one serving of baked tortilla chips on the baking pan of your toaster oven. Cut or tear the 1 oz of cheese into enough portions to place a bit on each chip. Place the jalapeno ring (or half ring) on top of the cheese.
Heat the chips in a toaster oven until cheese is melted and chips are toasted. Eat immediately, but be ready for the heat!
